Mad Mike’s Tailgate Chorizo Chili

Ingredients
  1. 1 Pound Mad Mike’s Sonora Style Chorizo
  2. 2 Pounds Lean Ground Beef (15% fat)
  3. 1 Extra Large Onion ¼ inch Diced
  4. 1 Tbsp. Minced Garlic
  5. ¼ Cup Vegetable Oil
  6. 1Tbsp. Mad Mike’s Sizzling Steak Seasoning
  7. ½ Cup Mad Mike’s South of the Border Seasoning
  8. 1 12oz can of your favorite beer (or you may use one cup of prepared black coffee)
  9. 2 14oz cans of Diced tomatoes
  10. 1 16 oz can of Tomato Puree
  11. 1 cup Mad Mike’s Green Chili Salsa
  12. 1/3 cup of Mad Mike’s Spicy Chipotle BBQ Sauce
  13. 1 cup Red Chili Sauce
  14. 1 Tbsp. Chili Powder
  15. ½ Teaspoon Cinnamon
  16. 1 14 oz can of Black Beans Rinsed
  17. 1 14 oz can of Whole Kernel Corn Rinsed
  18. 1 14 oz can of Ranch Style Pinto Beans with Jalapeno juice and all (Do Not Rinse)
  19. 1/3 cup Chocolate Chips
  20. ¼ cup of Diced Green Onion (Chives) for garnish
  21. ½ cup of shredded Sharp Cheddar Cheese for garnish
Instructions
  1. In a 8 to 10 Quart Sauce Pan add the following ingredients: Beer, Diced tomatoes, Tomato Puree, Mad Mike’s Green Chili Salsa, Mad Mike’s Spicy Chipotle, BBQ Sauce, Red Chili Sauce, Chili Powder, and Cinnamon
  2. Bring to a boil and then simmer for forty-five minutes
  3. While sauce is simmering add to a 10 to 12 inch skillet the following: Vegetable Oil and Minced Garlic
  4. After oil is sizzling (don’t let the garlic burn) add Diced Onion
  5. Let the onion sweat for three or four minutes stirring regularly then add: Mad Mike’s Sonora Style Chorizo, Lean Ground Beef (15% fat), Mad Mike’s Sizzling Steak Seasoning, Mad Mike’s South of the Border Seasoning
  6. Cook on medium to low heat stirring often to make sure meat is browned
  7. When meat and onion are fully cooked add to sauce
  8. Then add the following and simmer for one more hour stirring frequently: Black Beans Rinsed, Whole Kernel Corn Rinsed, Ranch Style Pinto Beans with Jalapeno juice and all (Do Not Rinse), Chocolate Chips
Notes
  1. When it’s time to eat, portion in the Tailgate Chorizo Chili in bowls then garnish top with cheddar cheese and chives if desired
  2. Serve with tortilla chips or biscuits and your favorite Mad Mike’s Gourmet Sausage Sandwich!
